Made 15lbs of chicken Italian sausage thinking I had hog casing. I didn't but had a package of calogen so I used that instead. Will there be any issue simmering in beer then grilling them? I have smoked them but never direct grilled them.

Nope I Broil or Grill collagen cased Kielbasa all the time. The kids think it is a little tough but it gets crisp and I like it...JJ

Thanks. It didn't pan out for me. A minute after hitting the grill they exploded.
Oh well. Not a big deal. Still tasted good!

mkatts, My sausages do the same thing (split) if the heat is too high. With the collagen casings you need a low heat, or they will split.

That def could be the prob. It was a hot charcoal fire. Wonder it I could simmer in beer for a few before hitting a much cooler grill?
