Well hello there. I'might Thomas. Originally from South Africa. But the Good old USA is my home now. Nebraska to be exact. Fairly new to the smoking gig. Enjoy the hell out of it. Was introduced to the world of smoking by my extended family. Got addicted to it. Started with a big offset, took me a while to get used to it by the time I had it cooking like a charm I got a vertical homemade electric smoker. Was a new challenge.got it under control eventually. Started to look at the pellet smokers, wife said I am not getting one until I get rid of my other 2. So I got a Louisiana 900 for Christmas. It is a real joy. Well just started to build a custom fridge smoker, any input will be HIGHLY appreciated. Especially the heat source. Want to go with 2 electric burners.
