New to the forum. My wife and have a ranch in a rural area and we raise our own livestock and have a big garden every year. That is supplemented with hunting and fishing.We also run a bear outfitting business.

We do a lot of canning and we kill and butcher our own livestock. I do our own curing with the ham and bacon and have done a fair amount of sausage over the years, but as we kind of get into semi-retirement we want to spend more time at it and experiment and improve. 

I am in the process of building a new smoker and it is going to take a fair amount of work, so looking on here for........... hopefully............ some places to acquire heat/timer control units and I know there will be lots of ideas from others who have built smokers.

As for the sausage making, etc. looking forward to picking up new ideas and ways of doing things from the vast knowledge base on here.
