I am new here and this is my first official post.
My name is Allen I'm 49, I live in media pa. Father of 2 teens and husband to my loving wife............this is beginning to sound like a eulogy..
I have been smoking ribs chicken and other things for a long long time. Most of what I know I learned from the school of hard knocks. I make a mean rib and a butt kickin pulled pork. But what brought me here is my dreadful track performance with Brisket. Brisket is a very complicated process to figure out on your own. Being a Man I don't follow directions or even ask for them. Which is one of the reasons I can't bake and the last put together computer desk I built just didn't look like the picture on the box.
But I came to a crossroads a few weeks back watching one of the BBQ contest on the food network. I knew I couldn't consider myself a true Zen Master of the smoking arts until I vanquished the brisket demon that has haunted me so. I came to this site to get the info I needed and quickly became engrossed in all the content you provide. This is a Great site and I think I will enjoy all it has to offer. Great e-course also

After this post and my wife gets up we are going to BJ's and get a brisket for a BBQ that I am having tomorrow. I'm pulling a all nighter on this one and this place has given me the confidence to do so.

I have the tools the charcoal and a match......let the games begin

I am new to this forum. I am from SE Montana and have dabbled a little with both charcoal and electric smokers. Haven't ventured too far from ribs, chicken, and fish. I am willing to listen and learn from anyone with knowledge about proper smoking techniques and tricks of the trade. Thanks for your time and help.
