I'm new to smoking.  After much research and deliberation, I decided on the MES 40 from Sam's Club for ease of temp maintenance.  I work at home, long hours as a court transcriber, so I don't want to be tending the smoker constantly.  We'll see how that goes. 

I smoked my first pork butt last weekend.  Previously I had only done butts in the crockpot -- not even close to smoke flavor!  The MES is so big that I put in some boneless/skinless chicken breasts, some quarter-pound hot dogs and some mild Italian sausages.  Wow!  So freakin' good!  I am hooked!  Now I want to smoke everything that's not tied down.  The smoker worked great.  I used hickory for that butt.  

My birthday is coming up on Monday, so I want to smoke some salmon for friends next week.  I'm searching around the forums for the best way to do that.  I bought some apple chips for my next smoking effort. 

I love experimenting with my new hobby.  Now I wish I had a few extra stomachs so I could eat more!  Glad to be joining you all here in the smoke pit!
