Hey guys, I'm Jay. I just upgraded to an MES 40" that I got as a Christmas gift. I've been using a little analog Charbroil electric smoker that wasn't the best at keeping consistent heat (or the magnetic door staying closed), but it was $50 and a gift from my lovely wife. I've been lurking on here, reading how others have smoked, brined, etc, and it has helped me greatly with some of my past meals. I look forward to firing up the new smoker pretty soon and showing off a little I know people on here are fond of using the AMNPS as a supplemental smoker in their MES. I'm planning on getting one, but hoping the chip trey will suffice for the time being. I might be doing some smoked buffalo chicken wings pretty soon, I'll be sure to post some Q-view if I do!
