Good afternoon!

I just bought a house in Auburn, WA USA last october.  Finally got a decent Char Griller model 3000 gas grill and I added a side firebox to allow for smoking.   Just kind of winging it a bit.  I have been able to smoke some chicken, couple of briskets and they turned out pretty good. 

I have a 2 probe digital thermometer, one for ambient and one for actual food temp.    Since I am going "old school" and just using wood for the smoking of the meats and such, I think I have a pretty good handle of it so far.  I am going to get some silicone sealer and seal the joint between the grill and the firebox, and probably get some of the adhesive gasket to seal up the doors a bit better. 

Any thoughts of other changes I should make to make this a better smoker? 

I am planning to try my hand at smoking cheese once I get an A-Maze-N pellet holder.  that will make cold smoking possible.  If I had more money, I would build a real smokehouse, but right now, that really isn't possible. 

I am open to any thoughts the more experienced people here could offer for mods.  I am pretty much limited to shopping at Lowes for the time being and keeping most mods pretty cheap. I am really looking forward to the long weekend coming up and getting my smoke on.
