I've been using a BIg Steel Keg for the last 4 years and just bought a Masterbuilt Dual Fuel Smoker this week. We started selling smoked peameal on a bun at the local farmers market in May and the demand required additional equipment. You refer to peameal as back bacon or Canadian bacon in the US. I will be smoking a little over 50 lbs of bacon on Friday to prep for the market on Saturday.

I'm looking forward to learning more about the art (or is it an addiction?) of smoking from the members here and wanted to thank TulsaJeff for welcoming me.
