Just wanted to say hello and introduce myself. I've been using a bullet-type charcoal/wood smoker for several years now, but keep looking to upgrade a soon as I find an excuse. Just hard to justify since everything I make with the one I've got turns out great, and I've learned how to control temperature and smoke levels really well. Typically, I grill once to three times a week, year-round, and run the smoker about every other weekend.
Since I'm also a woodturner, I've learned where to get to lots of good hardwoods, and I currently have quite a bit of Apple, Cherry, Hickory, Maple, and Mesquite scraps and cut-offs that I use in the smoker.
I've never tried Citrus, but I've been told it's not bad on chicken or fish, and there's always plenty of pruinings around here to pick up by the curb. Anyone have experience with orange or graprefruit wood?
I live in the Tampa Bay area, so there's really no off-season for grilling or smoking. Always looking for new recipes and tips and techniques to improve my cooking. Looks like there's plenty of really knowledgeable people here, so I'm sure I can learn a lot and hopefully contribute a recipe or two down the road.
