Hi everyone my names Boris and I LOVE bbq! I've always loved to eat bbq but until just a couple months ago I had never tried to smoke bbq so I had no clue what I was missing out on. I use a cheap Brinkmann pitmaster smoker and I am definately still learning so hopefully I can learn a thing or two from more experienced bbq'rs. I do have one question.. lately I have tried smoking babyback ribs but they seem to turn out kinda dry? I smoked them for 2 hours at around 225 then put them in foil with apple juice for about 1.5 hours and threw them back on the grill for close to another hour. I was hoping for a juicy rib that does NOT fall off the bone, I prefer a bit of a tug.. I'll admit I did have a couple issues with the heat shooting up to 270 a couple times on me for short periods and I bet thats part of my problem. I was using hickory for the smoke but I do not think I oversmoked it seeing as it wasn't bitter at all.. Anyways if anyone has a couple suggestions I am all ears

How's the weather out there in AZ? I always laughed during the rainy season when every single day there was a 30% chance of rain.
One suggestion on your ribs is you could throw them back on out of the foil for less time, half an hour and see how well that works for you.
 
The weather is good for cooking eggs on the sidewalk it has been about 114 out here but if you factor in the wind chill its about 113.8 not too bad! Our "monsoon" season for the past 2-3 years have been non existant but what can you do its a desert. I'll give your suggestion a try this Saturday and see how that turns out thanks

Do you get much of a chance to get up towards Tonto National Forest? Or Lake Pleasant. Can't think of a better place to BBQ!

Every once in a while I like to head up to the lake or up towards Flagstaff it is a good break from our heat.

First thing I would do, is ignore the temp. gauge that came with your smoker. Have you invested in a Maverick ET-73 yet?

If not, you might be cooking at a much higher or lower temp than what you think...most offsets have junk temp gauges. The ET-73, has two digital temp probes: one tells you the temp of the meat and the other monitors the actual temp inside the smoker - at grate level!

I would Google "Maverick ET 73" and get you one of those. I got one for $40 on eBay last year.

I'll bet after you get a nice temp gauge - you will produce MUCH better ribs.

Haha yea I did buy a maverick over this last weekend that was hilarious trying to explain to my wife why a thermometer was going to cost around 60$ she calls it my bbq baby monitor! you were definately right about the thermometer being off! Maverick would say 225 and the other would claim 260-270!!
 
First off welcome to SMF. Your gonna like it here cause there are alot of good folks here that would just love to help you with just about anything to do with smokin. Next I think you should look up the E-course it's free and very informative and it will show you the basics of smoking. Then check this out

Hello from Scottsdale!

I've been going low and slow for about 8 months now, had a cheap Brinkmann upright which I think taught me a lot. We'd grill most nights on our PGS gasser, and now the burner was in disrepair, I used that as an excuse to start looking for a ceramic Primo Oval grill & smoker, as I will use that to grill, too. Luckily I found a floor model, all new ceramic for $400, so everyone's happy!

Currently got 3lb of country style ribs going low & slow now at 275. See if you can smell the hickory over on the west side!

Another vote for the lake here, boats are a great place to (carefully) fire up the smoker. I'm off to Pinetop soon, a family member has a house up there to escape the heat... Sould be a welcome relief!
