I recently moved south and I'm amazed at the varying degree of products produced from the local BBQ joints and from friends I have come to know. I though I knew a little about smoking and curing meats now I know how little I do know. This looks like a great place to gather some incite and educate myself with some of the finer points of smoking. I am recently retired and now have more time to spend on my hobbies. I have an old smoker that's falling apart and I would like to build a larger wooden one. I have been fairly successful with pork butts but have never come close to properly smoking a beef brisket. Lots to learn and questions to ask. Thanks BT
