I recently moved south and I'm amazed at the varying degree of products produced from the local BBQ joints and from friends I have come to know. I though I knew a little about smoking and curing meats now I know how little I do know. This looks like a great place to gather some incite and educate myself with some of the finer points of smoking. I am recently retired and now have more time to spend on my hobbies. I have an old smoker that's falling apart and I would like to build a larger wooden one.  I have been fairly successful with pork butts but have never come close to properly smoking a beef brisket.  Lots to learn and questions to ask.  Thanks BT

  I'm not too far behind you in reaching that milestone and looking forward to having a little extra time to do all the things that seem to need doing after work hours, now.

Are you planning to make a wooden smoke house or a wooden smoker?  I have seen a smoker made from an old oak barrel, however the fellow finally gave up on it as it was a lot of work to keep the wood hydrated.  wooden smoke houses, on the other hand, are pretty common.

Joe is correct abot there being a lot of helpful folks around here.  Just ask away.

One eyed Jack I never knew there was a difference, on a small scale smoker, until now.  I've seen some nice ones here; the ones that look like outhouses

.  Looking for something 2x3 feet 6 feet or so tall and simple to build.  I'll certainly ask plenty of questions. Thanks
