Been grilling all my life, first with my dad, then myself for many, many years, but by no means an expert.  Went back to lump a couple of years ago with a BGE clone and love the control and flavor I get with lump.  Just got a Smoke Daddy generator and have been cold smoking salmon and a duck ham this week.  Picked up a cheap electric smoker and will mod it for the Smoke Daddy, that way I can smoke & grill at the same time. I have made some wonderful brisket on the clone, using cheaper fire controllers.  Was about to jump for a BBQ Guru when I decided to go back to a dedicated smoker instead.  Time will tell, but I have been getting excellent results cold smoking on the clone & expect the same from the electric.

We live south of San Antonio on a small acreage, just missed the oil fields though :-( ,  Wife is already retired & I will in the next 5 years or so.  I'm an installation engineer for one of the major medical suppliers.  I'm looking forward to many, many years of smoke.

Welcome, from southern Ohio, to the best forum on the internet if you are looking to learn how to BBQ/smoke/brine/cure/inject. Well you get the picture if you can do it to something you put on a plate to eat then someone here has probably done it then smoked it. Use the search bar at the top of the page and you will be led to the answer to most every question you can think of. If you don't find the answer there then just post it and someone will chime in with their opinion on the subject.
