I found this site a couple months ago when I was looking for information on smoking a pork loin. It came out perfect and made for a great date night dinner for me and my wife because of the information I found here about cooking times and temperatures. For that one I used hickory wood chips in a charcoal grill with offset smoker. I did a second pork loin Sunday but without my woodchips thanks to the active imaginations of my girls and their desire to be Power Rangers. Looking forward to learning more about smoking different meats and hopefully trying something new real soon.

Welcome to the board! I had fun visiting in New Orleans, another great foodie place. My sister was in Patterson LA, west of you. Bought shrimp off the boat in Morgan City.

Our family took a vacation down there in 1971 when I was about 12 years old, and let's just say the French Quarter was quite an education for a young boy.
 
There is definitely some great food out here. I stay away from the French Quarter these days if I can help it. Still crazy but not as young as I used to be.
 
I took the Tabasco tour. Unfortunately all you see is part of the packing line. They do have a store where I bought a bag of their wood chunks, when I soaked them they turned the water red.
