Have been smoking  for at least 30 years. In the 80's I worked for a local bank in Florida and they had  a mobile rig made out of a 1000 lb propane tank that we lent out to non-profits. Learned how to use and cook on that. After moving to Baldwinsville, NY purchased a New Brunsfels 2 barrel smoker. in 2007we took to the road to RV full time and gave that to my oldest son. Was pretty much "smoke free" until last year when I bought a Master Forge electric cabinet that I can load into the motor home. Visited and registered yesterday as while I have been satisfied with big cuts  have struggled with ribs. Read a thread on the 3-2-1 method and comments that maybe 2-2-1 was better. Tried the later yesterday and very happy with the results. Currently spending the summer in Salem, VA. & have a pork shoulder going today

. We now have a home in Mesa, AZ for winters  and return there every October. Look forward to learning more from here.
