Came across this site when researching smokers.  You all just confirmed what I was leaning towards and my WSM 18.5 is ordered.  I have been gas free for three years grilling on my Master Forge Charcoal Grill.  I use mainly apple wood thanks to my neighbors apple trees he has so greatly allowed to me trim up to stumps.  I enjoy all kinds of meat and have ruined my wife's desire to dine out as she is completely satisfied to stay home and grill out.  Looking forward to my new smoker and getting tips and advice from all the information already posted on this site.
