Howdy,
I'm Mike. I'm addicted to smoking...meat...
My apologies that I didn't post here first.
I married a South African Texan; Both the Country of South Africa and Republic of Texas love their BBQ (or Brai in South Africa)...
We use a Weber Genesis for grilling and I just got a starter smoker...offset type Charbroil American Gourmet (aka Wallymart Special-$85). I had been trying to use my Weber as a smoker but it's not the right tool for the job...
So far the Char Broil is good. I may try the mods but we'll see. I decided to go for an offset over a bullet because my co-worker is from Houston (as is my wife) and it seemed to be the Texan thing to do.
I got hooked on smoke from my travels around the U.S. and the world.
I discovered why BBQ and smoke was so good in East Austin, TX in 1992 at Sam's BBQ. I was hooked then.
At just shy of 40 I feel life is just beginning. My wife is trying to figure out why I spend so much time at the smoker and my nearly 3 year old son is trying to understand why he has to stop at an imaginary line near the grill & smoker.
I like South African sausage (Boerwors) a number of rubs and marinades; homemade or otherwise.
I do keep a kosher home and can explain all about it. I love to try Bison, Beef, Lamb and kosher game meat like Elk, Venison, etc. (hard to find but it is amazing).
Here's to tasty cooking and blue smoke!
