Hi guys, just finished building my first smoker. It's an old file cabinet and am marinating some beef skirt I have cutting it quite thin and have made my marinade from soy sauce, Worcestershire sauce garlic and onion powder black pepper and cayenne pepper. Marinade time 5 hours And intend to cold smoke for 5/6 hours using beech wood. Any suggestions or tips.
