Thought I should sign up rather than continuing to lurk and take advantage of every ones sharing nature. I am in Oakville, Ontario, Canada Currently running a WSM (with a stoker), a Masterbuilt gas smoker, a Weber Performer grill, and a homebuilt gravity fed smoker copied from a Stumps. If I can get it in the box, I will smoke it. Also into sausage making and curing of meats, smoking fish (hot and cold) as well as cheese. I have been doing this for about 40 yrs, and have a fairly strong background in food science. I am not a competition type guy, and do this solely for the pleasure of feeding my family and friends. I am always looking for new stuff to try, and learn. I believe that Vegetarian is the native word for "poor hunter"
