My wife gifted me with a Masterbuilt Propane Smoker for Christmas and I'm excited to get started !  It's a single door unit and the smaller of the two models I've seen around.  It's got four cooking grates so I think it will be plenty big for us and our friends.

I plan to use the chips my wife gave me with it but from what I read, chunks may be in my future.  I've read that the water pan is undersized in this rig so I may be busy keeping it fed and watered the first few go rounds but I think I prefer it that way.

We've got a friend's birthday event at our house at the end of January so I've got a few weeks to get my act together before my first big smoke event.  I plan on working on Brisket and Spare Ribs because they're what I like best.  Later I'm going to move onto chicken, turkey, fish and vegetables.  If I get get the heat low enough, I'd love to be able to smoke some cheese.

The frustrating thing at the moment is finding a suitable gasket to seal the door.  I've been to all the usual sources here in New Orleans but nobody has anything even close.  I ordered the strip gasket material from Allied Kenco and figure I shold be able to find the silicone adhesive locally.

I've been cooking on a Weber Genesis Silver B propane grill for 11 years with mixed results, mainly due to not cleaning it frequently enough.

I'm also a pretty competent trukey fryer, I've probably fried about 30 or so in the last 11 years.  I had a no name hardware store fry rig for about seven years and now I have a SafT Cook model that's safer, but not as much fun.

I've been reading the Forums for a few days now and I'm feeling pretty good about getting started.  I appreciate all the advice and look forward to sharing my successes and ... let's call them them learning experiences !

First off welcome to SMF. You'll really like this place for there are a bunch of really good folks here that would just love to help you with just about anything to do with smoking meat. Then if you have any questions you just post them here or yu can try in chat for a faster answer. If you are really new to all of this I would recommend that you look up and take the e-course. It is free and it will also give you the basics on smoking. So with all that said now go and get something to smoke.

You can cold smoke cheese in that smoker no problem Just get your self 1 of these A-MAZE-N Products, LLC

Lots of folks here use them and love them. If you goggle it you will find lots of videos of it in action
