My name is John Paul, my friends call me JP although on the net I'm usually Sky Monkey (I spent a lot of time at heights slinging and welding steel)

  I'm in the Pacific NW of the U.S.

  I use a Smoke Hollow gas powered vertical cabinet smoker.  My specialties are pork ribs and beef brisket but I also smoke pork butt/shoulder, chicken and fish and hell, I've thrown stuffed burgers and hot dogs in there as well (not to mention various vegetables) although I'm the first to admit I have plenty to learn (specially about fish)

  I've been smoking meat for about 2 years, lately I've been having a hell of a time getting my gas smoker to be consistent.  Something wrong with the burner or gas flow anytime I turn past the lowest setting.  I can't even risk buying a brisket until I figure it out but I'll tackle that problem as soon as I figure out which area of the forum is best for that.
