Hello everybody. My name is Carlos and I currently live about 2 1/2 hours south of Chicago.

I got a WSM for Xmas last year and spring is finally here. It's tough to have the smoker in the garage while the snow piles all around you.

I've been grilling for many years - learnt the love for charcoal and steaks from my Dad. I've had a Brinkman grill for over 10 years and I used it to cook everything from steaks to ribs to briskets.

I've used my WSM grill three times - twice to do baby back ribs and once (still in progress) to do a pork shoulder. I'm looking forward to do briskets, fish and chicken.

Oh, yeah! That was 11 lbs worth of meat. I was hungry, but not THAT hungry! ;)
