Greek night: chicken thighs, pilaf, salad

It is dill, yes. Simple but powerful side. My kids could probably fill up on pilaf if we had a meat shortage.

I sauted some onion in butter+olive oil, then mixed in the rice until fully coated. Added broth (twice the rice volume), a lot of lemon juice, salt and pepper; brought to boil then simmered until all liquid was absorbed. Fresh chopped dill (or parsley, or both) before serving.

Not pilaf but we cook orzo sometimes.

I remember being at a bar in Italy with a (local) business colleague. I ordered espresso he ordered orzo. Huh? Pasta at a bar? I was more surprised when he got his order ....something that looked like coffee. Turns out orzo also means barley coffee LOL.
