    I live for 27 Years in Florida and like to smoke Schinken like in Germany. Many times i try but it is not easy. I need help.

  7. RICH schinken is bacon-german bacon-and dang good stuff.very lean-kinda like we make here in SMF.welcome my friend to SMF.

    Schinken is Ham, cold smoke. I convert a Frigidaire to an cold smoker and add an smoke generator from E bay. The smoke generator produce smoke but allot of soot an the meat test like soot. Hmm,any ideas ?

  11. Smoke generator... Hmm..can you post a picture or describe it?
    Sounds like an incomplete combustion problem- something I have suspected of some smoke generation units.

    Hey people... what ever happened with that unit a couple tried here?

  13. Don't know what you have for a smoke generator, but it is not burning the wood completly, you need to give it more air. Is there some sort of air adjustment on the unit, if so, start wide open and crank it back if need to.
