I have been smoking for about 5 years now. I bought a Char-Griller Outlaw with SFB about 4 years ago and haven't used it much due to much of the problem I have seen other Char-Griller owners have. I ran across the char-griller-smokin-pro-with-firebox-mods thread by accident and what a treasure trove of info. I made a few mods recommended such as extending the stack to grate level, expanded metal basket for the SFB, a baffle and tuning plate. I am anxious to try it now. Tomorrow, I will be smoking a cross rib roast and a boneless center cut pork roast. My mouth is watering just thinking about it. Most of my smoking has been on my Weber Genesis Silver. I ran 3 flat pieces of steel front to back to support the cooking grates sideways at the back of the grill, a couple of disposable bread pans with a bunch of holes in the bottom for the woodchips placed on the front burner. Works great. I make killer pastramis with it, as well as baby back ribs. I love this forum. I did take Jeff's smoking meat e-course 4 years ago. I also use his rub and sauce recipe.
