I was able to use my weber last week for the first time. it kept great temp. I had already put a seal kit on it, and used the digital maverick thermo with it, I am very pleased with the way my pork spare ribs and tri tip turned out, only thing was I used pappy's rib rub which had to much salt, going to mix my own this time. the other thing was my wife said it had to much smoke taste, I used about 6 chunks of oak mixed with hickory, I will reduce it by a couple, it was about 5.5 hours  of cooking time. I thought it was even better the second and third day. but all in all I am very pleased with the out come. I'm  of work  today and I'm headed out  to get some more ingredients for the rub and some ribs for this weekend.  Doug
