Hey all from the great rainy northwest.. Names Mike just got my first true smoker. I've been using a chip box on my grill and while it was "ok" I really wasn's satisfied with the results so I told the wife that I wanted a smoker for Christmas and after alot of searching both the web and budget dictated the No. 6 gas smoker from Smoke Hollow... Got it put togther this morning and let it season for 3 hours with a tray full of Hickory. Only problem I can see right out the gate is that I cannot for the life of me get the temp down under 300 even with the damper all the way open.

Well that's about it I promise not to ask too many stupid questions before I use the search function.

Welcome to SMF glad you decided to join us. You'll find lots of good info and some great recipes here. As was said don't trust that stock thermometer they are hardly ever right. Are you using water in the water pan that should help some too. Have fun and happy smoking

Yep filled it within about and inch of the top... I had a small ~3lb brisket that I was going to grill up today but figured it would be the sacrificial lamb so to speak.. Just pulled it out after 5 hours for a rest. New member new QView up coming...
