Going to experiment this year with some Alder and Apple cookies, wafers, discs......whatever you call them, in my Big Chief smokers. Found a local guy who sells wood to restaurants and smoke houses and bummed 2 pieces of Alder and 5 pcs of Apple off of him for a whopping $10 smackers.

Longer pieces on the right are Alder.

Put a demolition blade in my Milwaukee chop saw and went at it, creating 2 stacks of Apple and 1 of Alder. Removed the bark off of the Alder per recommendations from our infamous Dave Omak, due to it's bitterness. I did find that the alder still has a little bit of moisture, which I'll be drying out over the weekend.
