guess this is where I'm suppose to introduce myself.

So a big "hello" from Nebraska!

I just bought a half a beef, and have a Luehr-Jensen Big chief, but for whatever reason it wont get above 155F (it's second hand - I don't think there's much recourse), so I'm looking at smokers now since I have all this beautiful beef just waiting for some smoke!

I have some questions, which I'll post in the appropriate section.
 
Welcome to SMF and most astute of you to post appropriately first! Yeah that Chief is a bit limited... don't think yer gonna pull off a brisket in it ;{) Look around and ask... SOMEONE has the answer here!
 
welcome to the smf..... The big cheif is set at the factory to only get to around the 140 to 160 temps. I believe... I use the little chief and if I remember its around those temps.... You might want to try putting up a wind block, that will help...I made an insulated box to put my little chief into... That helped alot...The outside temps affect the cheif smokers alot becouse they aren't insulated and they have small heating elements.... In mine I put a bigger element in them.... And I made a temp control using the control from an electric frying pan.... Lots of mods that you can try in the electric section here on smf..... Hope that helps you out.... Thank you. I got it for $30, so I can't complain too much, but I have to get SOMETHING that will get hotter. Thought this one might still work for smoking fish...(?)

Kookie: I did put up a windbreak, even ran it in my parent's old root cellar once (very sheltered), still wasn't hot enough to finish anything.
 
I have a hard time getting my ECB past 200,with a single electric plate-have another I use coal in-can bring that to 300,have pondered on a single propane burner from harbor freight-thats my next step-for the smoker i building.
 
Welcome to the SMF, you'll enjoy the friendly folks who are always willing to share. That half a beef is quite a load for the Big Chief, do some research on smokers as there arr so many types and sizes, and $$$. Good luck my friend.
