Posted a thread in Beef about my first brisket attempt coming up and didn't realize I should post here first. First of all, my name is KeAloha and am in Portland, OR. I grew up in Hawaii, so I never had exposure to real que. Yeah, I've made a lot of kalua pork, but that's in the safe confines of an oven. Since I homebrew, I figured it was up to myself to make my own barbecue instead of waiting for a restaurant up here to do it for me.

I got my first smoker last year, a Char Griller, and did some mods I found on another forum to make it perform better. Did some butts, ribs, and chicken on it last summer and got fairly comfortable with it.

And that brings me to now. Found this forum a few weeks ago and it looks to be the friendliest and most active one out there. welcome to SMF! ya the chief got you,I almost tagged ya but was off dutie.what u mean no q in the islands-pig in the sand covered in banna leaves with some poi on the side-heck I might be a howlie but hawaii has some great smoke going on. glad u found us-enjoy

Oh, don't get me wrong, I love good kalua pork and lau lau, but pretty much everyone just cooks it in the oven now. Most of the stuff the people talk about here I've never seen before, let alone eaten them such as cracklins, burnt ends, ABTs(I've at least heard of these and know what ABT stands for). And for now, Carolina vs. Texas vs. <insert state/city/region> styles completely fly over my head. I've got my homebrewing down, now I have to learn about and make some awesome BBQ to go with it.

All these replies are getting me excited to do the all nighter and get some pics up.
 
cool just ribbing ya-and ya won't take time at all and you gonna be doing all those things and more-I use the fat off my bacon bellies to make cracklins-Dr. don't care for it but I sure love them-and in cornbread OH MY.your gonna have fun here. my x grew up in the islands so know a little.
