My wife suprised me last week after I had been asking for a newer smoker.

I've been smoking various meats for 10+ yrs and I've had charcoal and propane smokers in the past. I like to make jerky but my propane smoker would burn the edges of the meat. I couldn't get it 'cool enough'. After researching various smokers I elected for the MES40 for $299 at the local Sams club.

I did some chicken wings on it last monday-they were excellent. So far (my wife's used it as much as I have) we made pork steak, ribs, chicken wings, pork loin and chicken breast. Im hoping to make some jerky later this week. This is a great website with lots of info. I used the 3-2-1 for the ribs and they were great!

Here's my smoker doing the chicken wings last monday...

I have been very skeptical of this smoker from some of the feedback, but the positive outweighed the negative, so I'm going to break down and get me one. I have a friend gong to a city that has a sams club and he's going to make the purchase for me.

I should have it up and running by the 25th of this month.

I hope that you purchased the extended warranty from Sams. I have had the MES 40 for over 2 years. About 2 months ago the wires to the heating element burned out. I called the warranty co. and they sent an inspector out. He determined that the unit was unrepairable and they sent me a check for the price I paid plus tax. The fix was easy, but in essence my MES was free.

As for this Smoker, I absolutely LOVE it. I don't use the chip loader. I use the AMS and AMPS from Todd Johnson. This makes this a true set and forget with unbelievable Q.

I will pull off the back panel this afternoon and then check w/Sams on the cost of the extended warranty-great ideas!

I went to the local Scheels this morning and bought some LEM backwoods summer sausage and some casings. Im gonna start with doing only 5lbs of some venison that is already ground and mixed with pork. This will be my first time at making sausage-Im excited!
