I'm a newbie to this great cooking method. I picked a a barely used GOSM 3405BGW. I love the size. It holds a steady 225 degrees with minimal checking. But I don't get much TBS.

I added an oven thermometer inside on a rack. The door one is a bit off.

I also added a larger cast iron smoke box from HD next to the smaller box included. I trimmed the smoke box stand legs by 1/2 inch to get thw boxes closer to the burner, hoping to increase my smoke output. Nothing doing.

That's it so far. Any suggestions for mods to do or equipment to swap out (maybe a cake pan or add side vents?) Would be a great help.
