Goose Slim Jims

    Made a batch of fresh goose slim jims last week for buddys. No stranger to smoking and processing, been for 30 years. Have many smokers and pits and a smokehouse.

    These sticks were hung in the smokehouse. Its pellet fired by a Traeger pellet assembly.

    First opff Welcome to SMF there Nepas. I can tell that this isn't your first big Rodio by the looks at that smoke house. You sure do have some fine looking snack sticks there too. I wpuldn't mine tasting some goose stick what do they taste like???

    Makes me wish I was still hunting & fishing in Northeast PA (if that's your meaning of NEPA).

    The only thing your missing is more counter space. Nice slim jims. How many gooses (ha) did it take for all the meat in the bowl?

    This was 20 goose breast. I did around 75 lbs so far.

    More counter space is a work in progress. Half the garage is being made into a butcher/processing shop..............Momma dont like all sorts of dead critters on her counter [​IMG]
