I just realized that I didn't properly introduce myself! My apologies for that.

My name is Zach, and I'm a smokaholic. The first smoking I did was about ten years ago at a restaurant that I worked at. I got my first (used) New Braunfels offset about 4 years ago and had mixed results, but I really enjoyed it. About 2 1/2 years ago I started a new job, and my boss has a WSM. I've done quite a bit of smoking on that thing, and it's served me well. I'm a personal chef, and the boss loves BBQ, so it works out quite well. That WSM is the best smoker I've ever used, and I wanted to start doing some research for MY new smoker.

At first, I was going to buy an ECB, and my wife was cool with me spending $100 for a smoker. But I started doing some heavy research online. All of my many hours of research brought me to a few options, but I fell in love when I saw the Lang 48 patio. Convincing my wife that I needed to spend 20X what I originally quoted her, was not an easy task, but I was successful, and my new Lang should be here in a few weeks.

So, I'm looking forward to sharing lots of Q-view with y'all. I'm sure I will have many questions about smoking with my new baby, and I appreciate all the help I've already received from you kind folks. If anyone has any questions for me, I've got 15 years of foodservice experience that I'm happy to share with anyone, but I am a rookie in the BBQ world for sure. I humbly bow before you and wish to learn as much as possible from the masters!

Aloha,

There's a lot of great people on the SMF.  Have fun and post the Q-views of your new Lang and Smokes as soon as you can.

Wow, that's some pretty smooth talking!  Some of us around here could use some pointers; what could I possibly say to my wife to get her to green light a 20 fold expenditure increase for a smoker (or anything else, for that matter)!

What did you promise her?  How many carats was the new diamond?

Welcome! Great to have a personal chef here! I used to do that years ago, now that I am semi-retired professional photographer I just take pics of all my food and then give it to the neighbors! LOL! There's some great people here, I have made so many friends and the advice is such a big help!

First off welcome Zack to SMF. You'll like it here cause there are alot of really good folks that would just love to help you with anything to do with smoking. Now we like having new folks here to give a new prospective on some of the ways we do things around here. Now if you are really new then I would suggest that you sign up fir the 5-day E-course it free and it will give you the basics on smoking and a few recipes too. Here's a link to it:

http://www.smokingmeatforums.com/forum/list/127

then you will have a method to your newly found madness and believe me it will be a madness. Then when you start smoking things you will have to learn how to post the pictures / Qview

here. So here's a link to a tutorial on how to post your Qview so we can see what your doing.

 http://www.smokingmeatforums.com/forum/thread/82034/how-to-post-qview-to-smf

Now the next thing you have to do is run out and get something to smoke. Then just smoke it and if you have any questions just post  them here and we will answer all your questions that you might have. Oh yea there's no stupid questions we were all there in the beginning and we just really like to help others enjoy the fabulous smoked foods that we do. So again

Welcome to Your New Addiction

Zach, Welcome to the SMF forum.  Now, you are going to fit right in because here at SMF, what we do is convince our significant others that we need to spend more money & more time on smoking meats & treats & it works out fine for all parties involved.  As long as you serve your wife up some delicious smokey goodness with your new rig, you should always be able to almost talk her into anything smoke related.

I want to say, congratulations for your lang (Cause God only knows what you had to promise or DO to get it,
