The time has come that I introduce myself. I have been lurking and learning since July of 2007. Ya'll have taught me a lot. I have been messing around with smoke cooking for about 18 years now. most of what I smoked was country ribs, baby backs and yard birds. Good eats but not great. Until this year I got a Smoking Tex 1300 electric for fathers day, with past experience and lurking and learning I have become a smoke addict. so far I have I have tackled and feel I have mastered several things like shoulder butts and picnics', meat loaf, Bloney (bologna chubs), Turkey Breast, Turkey legs, yard birds, Fresh Eggs, Fattys, Armadillo Eggs, and Canadian Bacon. it has all been great eats. The pulled pork is much in demand by family and friends. In fact my 15 year old daughter and her friends have wiped out a 10 pound butt in one day, they don't mess with the buns and slaw just pile the pig on a plate, cover with sauce and pig out. have yet to try ABT's but they are on the short list. will be trying buckboard Bacon soon. Just got word that my local IGA store has gotten in the High Mountain Buckboard Bacon cure I asked for, At $5.29 a box I will be picking up 4 boxes today, and I have about 40 pounds of butt in the freezer. sorry for the length of this normally I don't say a lot (draw back to my grand daddys raising and his advice to me for learning was keep your mouth shut and listen to and expert.) I get started talking smoke I get carried away.
 
Heh... We mighta had the same Grand daddy LOL...or at least they gave the same advice!
