I'm born and bred Texan but now live in the KC area.  I have been smoking meats now for about 8 years and feel like I have perfected my way of doing it.  Currently trying to learn how to use a Traeger however having challenges w/ temp control and smoking times.  I have a wood fire smoker (Horizontal), a Bradley smoker and a gas grill. 

I'm looking forward to cooking up a feast for the long weekend, of ribs, brisket, chicken and venison loins.

I look forward to learning new techniques and recipes for better smoking from everyone in the forum.
