thanks for all the info. I just ran across this site and loved it. many a good tips here. I wouldn't call myself a "Pitmaster", but I wouldn't say that I'm "just getting started" either. Food is one of my hobbies. I like to try different stuff. I've got one of the older models new braunfels hondo smoker, one gas grill, an upright, r2d2 style water smoker. 3 camp grills and many a utensils. I have great resources and love to cook just about anything. I look forward to all the friendships that are going to be made. thanks again. l8r
