Greetings everyone. My name is Mike, I've been grilling (gas / charcoal) for 35+ years and finally now getting around to doing my own smoking. At Thanksgiving dinner with family we were all talking at length about grilling and I remembered a few years back when I was in Texas on vacation near Round Rock and my sweetheart and I (she's a professional dog trainer attending class there) and we ate at the Salt Lick BBQ and since ordered (mail order) some of their great smoked meats (beef brisket, pork & beef ribs, etc) and how its high time to stop that and start doing this thing on my own. This week I'm ordering an MES 30 smoker (20070910) to get my feet wet, but it may be good for the long run too, we'll see, I'm a newbie. I plan to start off simple but my endgame is to make a killer savory beef brisket. I've been reading posts on this site for a few days, all looks like good info. After I get started I may ask for some pro advice on making a good beef brisket. Thanks....
