I forgot to take pictures of the ribs untrimmed but i will next time, here are just the 3 racks ready to go till i smoke them tomorrow.

a little background; just got into smoking only things i've smoked so far were a pork shoulder and turkey legs. I've ever smoked ribs nor used the mustard as a base method either. the rub is McCormic Grill Mates Mesquite.  Also i would normally just grill everything and use a wet rub(if its even a term)

Going to use that 3-2-1 method as well, as i've never done that as well. I'll have more pictures up tomorrow as everything is going.   the side is going to be some beans in the pressure cooker, "colombian frijoles"

Sounds like a good plan don't forget to post the Qview when you get done and good luck with the smoke
 
whats Qview. i knew where the thread as in the old layout with the meaning for words, but now i'm lost

it's been way too hot here in NY.. it's coming down now but that stills leaves me at 90
