Kind of strange, i turned the Auber up to 275 from 225 to help get over the stall, since I was behind schedule. And it couldn't get the fridge past 250 after a couple hours. Strange cause I got to 325 on the seasoning run with same weather conditions? Who knows. Enjoy!
 
have you done another dry run with the smoker to see if there are any issues with your controller?

if it wasn't going above 250 was the element staying on the whole time?

I had an issue with my controller where the house tempo reading wouldn't go over 225 or 250 and as a result it kept the power to the element on for a few hours, never cycling off. the house temp was actually closer to 450f.

found a kink in the temp probe, I haven't replaced it yet or turned the smoker on in months. hope that's all it is. Their help desk said its likely a faulty temp probe.

I did the original seasoning run and the temps were spot on, I don't think it was a probe error because my 6.5 lb butt took about 11 hours, so that i felt is fairly typical at 225F.
I will definitely put a secondary temp source next time I smoke to make sure that the probe is working right.
