Good morning from Alabama. New to the site as of this morning. I have not smoked anything in over two years nor made any sauces. In 2005 we opened a bbq place. We had ZERO restaurant experience. Got it up and running and self sufficient in two years. Then a huge family problem blew it apart. About three years later I reopened just a drive through and ran it by myself for about three months then brought my wife on board. Once again about 2/12 years in a family illness shut me down. I've had no desire for bbq or smoking since. Well I finally sold my smoker about 4 months ago and now I'm wanting to play around with food again go figure. I'm looking at small electric smokers but they are just a little too small. Thinking about building my own. I'm one of those people who think they can build or do what ever I set out to do. But I'm a perfectionist and get aggravated because it could've been done better. Ugh! Anyway anyone that has built a smoker out of an old fridge or oven would love to pick your brain and photos. Welcome, from southern Ohio, to the best forum on the internet if you are looking to learn how to BBQ/smoke/brine/cure/inject. Well you get the picture if you can do it to something you put on a plate to eat then someone here has probably done it then smoked it. Use the search bar at the top of the page and you will be led to the answer to most every question you can think of. If you don't find the answer there then just post it and someone will chime in with their opinion on the subject.

Since there is too much negatives in the world I'll share two funnies. The first one happened after I dropped a butt I was taking off my JR. Enterprise smoker. It hit the floor so after I took care of my other butts I went out picked it up cleaned the floor and carried it in to dole out to dog owners for their pets. Well one of our best customers came in and I sled him if he had dogs. He said he had a bunch of them so I gave him the whole butt. It was still hot. I told him it has rolled across the floor in my smoke porch and I could not serve it. The next week we found out that he had taken that thing and some of our sauce bought buns and gave out sandwiches to people. We found this out from some of the people he gave sandwiches to. After that anything that we intended for dogs the dog had to be with the owner, except for bones. The other funny one of our regulars came in for a sandwich got his meal and was about 3/4 done with the sandwich when he noticed it didn't have any meat. He was like the slaw and sauce was so good but I knew the bun didn't feel right. Oops.
