I have a 10.7 lbs. pork loin in the freezer, and I have decided to smoke it. I have been reading that they tend to dry out. I was considering injecting instead of brining and marinating. I am also considering covering it in bacon as well. I was thinking about a rub as well. I know they cook very quickly, what temperature do you like to cook at? I am planning 275 to an IT of 145.
