Nothing fancy today, just a yard bird.

They had an incredible sale on chickens. I hadn't tried a beer butt chicken on the new pellet smoker yet. I had some Louisiana Grills Poultry seasoning I wanted to try. Obviously, I could not ignore the portends.

However, I don't actually make beer butt chicken. I make ginger butt chicken. I think ginger ale gives a better taste than beer. I am sure the fact that ginger ale is cheaper didn't affect my choice. Also, it sets a better example for any children around. I am sure the fact that ginger ale is cheaper didn't affect my choice. Ginger ale is nonalcoholic. I am sure the fact that ginger ale is cheaper didn't affect my choice.

I rinsed and dried the chicken and worked my fingers under the breast and thigh skin. I rubbed oil all over the bird and under the skin.

I rubbed the seasoning all over the bird and under the skin.

I put 1/2 a soda pop can of ginger ale on the roaster and put the bird over it.

I put the bird on the pellet smoker preheated to 350 F and roasted if for 1 hour. I made sure the IT of the breasts and thighs were over 150 F. I took it inside and pulled it off the roaster.

I cut it into serving size pieces.

We served it with diced new potatoes and a tossed salad.

The Verdict

Beer butt chicken is great because the skin is crisp while the meat is moist. The pellet smoker seems to do this even better. I think it is the fan circulating the hot air. Anyway. this tasted great. The skin was thin and crispy. The meat had a wonderful moist taste. The seasonings were very good too. This isn't a spicy barbecue blend, it is a nice herb blend that compliments the chicken without overpowering the chicken taste. Yep, this turned out great and the cost of beer had nothing to do with it.
