Getting ready for the weekend

  1. It's Pastrami Sunday. Just rubbed 26 pounds of it. These will be in the smoker nice and early Sunday morning.

  3. The Pastrami took a little over nine hours. Threw a couple racks of St.Louis style ribs and a chicken I brined last night. Just a couple more minutes on the chicken and it is dinner time.
