We have decided on fatties. Is a country wedding so will go really well. I would like to request any of your best or even just something you liked. I am going to prep the fatties before hand and have a friend smoke them for me. Or I will do the day before and just reheat. I have about 1.5 month to figure this out. Date is Sept 4/09

A fattie feast, that's great!
One that I did and was among a top favorite was a smoked garlic fattie. Just smoked a head of garlic up keeping it still crunchy, about an hour or so I believe, minced it and mixed with sausage and rerolled and it was great, but I'm betting cheese inside would be great too.
You could also do a couple of those really huge 3-4lb ones.
I would say it's best to do them that day though certain ones will reheat fine they are best fresh, things like cheese filled could ooze on a reheat or veggies texture would break down a bit more during a second heating.
 
First, I must congatulate you on your upcoming union!

For a larger fattie smoke, you may want to try the pies...they're pretty impressive...fillings can be much the same as a regular fattie, just be sure to keep it a fairly thick consistancy.

Congratulations Dennis! Great idea you have and sure to go over wonderfully as a different take~ points for originality and nuptials too!

There are so many fatties that taste great, so many that look fantastic...where to start? You have a task in front of you my friend.

I'm not real creative I stick with breakfast and pizza fatties for the most part

I like to make breakfast fatties with scrambled eggs, onions and cheddar cheese in the center, the fattie is wrapped in bacon of course.

If I plan to serve it the next morning I leave out the cheese. Take it out of the fridge for breakfast and cut it into 3/8 inch thick patties. Fry as you would do a breakfast sausage pattie putting shredded cheddar on the top to melt. Its really good done this way.

PS. Fried Fatty Patties put on a bun with a fried egg make great breakfast treats. Like a flavourful Smoked Egg Mc muffin on steroids.

I like JD breakfast sausage stuffed with cheddar, green peppers and onions.

As someone said the pizza ones are good especially the next day. I just made one out of a purdue turkey Italian sausage log(tastes more like pepperoni) stuffed with mozzerella cheese and pizza sauce. The next day I sliced it and put the slices on a pizzeria bought uncut cheese pizza. Great

My next will be JD breakfast stuffed with chedder than some ABT's filled with cream cheese and wrapped in bacon, lined up in the middle.
Oh and I don't wrap my fatties in bacon, just the ABT's
 
When are you getting married? If you wait long enough, the Summer Fattie throwndown will be beginning of August. You can wait see What people make there too.

I'll post the throwdown rules tomorrow.
 
I'd be gettin' this union started off in the right direction... do some pulled pork and brisket fatties... pull an all nighter 09/03 - 04 to get 'em prepared, party hard in the afternoon of the 4th and crash about 7 pm; sleep like a baby on your weddin' night - just tell the spouse you gotta get your rest to pull another all-nighter for the parents and in-laws to feast on before all of 'em leave...now dontcha think that's gettin' the new wifey acclimated to what weekends will be like???
