Got my last 3 lbs of Georgia gator heading towards some jerky.

Does that taste the same as Louisiana Gator ????


I didnt notice any taste difference. I bet the Georgia gator will rip yer ass the same as an LA gator though....EH

Sorted and rinsed the gator.

Cut into gator nuggets. Going with 2 marinades along with 1 cup water and 1/2 tsp cure 1.

The gator is not as dense as chicken breast so i'm only going to vac tumble for 5 mins then into the fridge overnight.

After 5 mins of tumble its going in fridge.

Be back tomorrow on how i'm going to do this.
 
Was going to put some smoke to the gator.

But

When i took the top off the vac canister i could smell the smoke from the marinade.

So

I'm just going the lazy way.

Going with dehydrator for 1.5 hours at 145* Then to 155. Looking about 7-10 hours i guess.

Was out all day with my wife. Got home with 45 mins to go so i pulled the gator. Taste good, kinda dry but ok. Next time add 1.5 Tbs canola?
