Funky smellin Butt!

I talked to the meat manager at Sam's club about this. He said in a perfect world cryovac meat will last 45 days after packaging. He said what you smell is the gas used and should dispell after rinsing and airing out. I personally aged beef in the bag at the restaurant and yes it smelled until rinsed and aired out.

Everyone has their own level of comfort though, do what you feel comfortable with. Never throw meat away when in doubt, take it back where you bought it.
 
14 hours in, and they are at 190, almost time to rest.

Looks like I will rest them overnight and pull in the morning.

Thanks again for all the advice, I feel much better about it now. I will of course take the first taste test just to make sure all is good.
