I typically get the meat from the local butcher but this time I got it at Sams. I don't know if I will ever get it at Sams again or not. I called and ordered it and when I went to pick it up last night they didn't have the order. They only had 3 cases so we had to get almost everything they had out in the cooler.

WOW.   Order cases at Sams also.   Never had that problem

That's pretty good. Did you sell them whole or sandwiches? And did you sell tickets beforehand?

We do a meal with pulled pork, baked beans, coleslaw, chips, desserts and homemade ice cream. We don't do tickets so it makes it hard to know how many people to plan for. We always just make extra and what ever is left people are always willing to buy.

Will all of those butts fit on your one smoker? I am having one built and it's about the same size as yours and was curious.

Gonna be a long night but looks like you have some company. Have fun. What kind of wood do you have access to up there in Pennsylvania?

I had help prepping and have help lined up to pull. It's hard to get help for the night shift.
I'm going to use some hickory, oak, cherry, apricot and apple.
