So I have been lurking on this site on and off for 6+ years and figured I should finally commit to participating in the forums.

My name is Patrick, I am from Virginia outside of DC but grew up here, Missouri, and California.  My mother is from New Orleans and I have a bunch of family in Texas. So I am a bit of a culinary hodgepodge.

I love to cook and started smoking in 2012 with a Brinkmann Gourmet (charcoal version). I modified it before using based on this and other forums.

 

In 2015 I got an Oklahoma Joe Highland because I could only afford a cheaper offset grill. I also modified that but to a much lesse=r degree than I did the Brinkmann. 

Despite my wife's initial reservations she now helps me with prep and some day of issues, but still keeps away from the fire boxes.

Lastly I have run an invite only board game group every week for the past 7 years or so.

I guess I would say hello since I was on, and I have a really tricky smoke on Saturday.  Getting whole briskets that don't cost the earth around here is difficult at times and I ended up with a 16.75lb monster.  On top of that I am making 2 racks of ribs, a 9lb pork shoulder, and a pound of sausage.  This would normally be easy except for the brisket (only my second attempt) but the weather forecast just changed from 5-7 mph winds to 12mph winds.  I have plenty of wood and charcoal but still not sure how everything will go.

I will try to post an update here or in a new thread somewhere.  In the mean time I am trying to figure out how long a 17lb brisket will take to cook, plus or minus 3 hours.
