Anyway, I've been Qing for some time but decided to try the smoke religion after sampling some salmon a friend did recently. Boy was I hooked! We live in N. Cal. on a small ranch and raise kids, dogs, horses, cows and as much Hell as the law allows! I recently bought a master built electric smoker and this thanksgiving will be it's maiden voyage, hopefully it won't end up like the titanic! So far I'm using the keep it simple stupid method. From what I've read it amounts to enough heat to cook the noseeums and enough air to keep the meat from being soggy--piece a cake. ps. we're doing one in the oven--just in case!! Will let you know how it turns out. Party Hearty one and All and Happy Thanksgiving!!!

Welcome Danger. Wow, it never ceases to amaze me how folks will do their first smoke for a big dinner...I see where the handle comes from ;{)
