Hello everyone. First let me start off by saying great site I have been reading for days and this is a great site i have already learned so much so thanks so much for that. So a litller about me I am  from Ontario, Canada. I have a new masterbuilt 30" electric smoker that i can't open till christmas so its siting in my living room mocking me. i have never had or used a smoker and am looking forward to making some beef jerky was temped to smoke a turkey in it for christmas dinner but have decided that haveing the all the inlaws over for dinner isn't the time to be testing out a new method of cooking but then if i screw up they won't come back hmmm may have to rethink this lol. My biggest complaint so far is finding supplys here in Canada the closest place i can find something like a hi mountain sesoning kit is 145 min away. Went to a place today that i was told had  a good selection but i am not sure about what i bought the sales guy said it was for jerkey but not sure if he knew anymore then me about the product it is labled as some sort of binder which i think is for sausage and there are no real directions to make it into a maranade. The other issue i have run into is that know sells -tender quick up here but was told to use this stuff called pciklecure -red- and is the same just a differant manufactuer. anyway hello to everyone

  I have an MES 30 and you will love it.  I would highly recommend you getting the AMNPS (amazing pellet smoker) to compliment your new MES.  Don't you have a Cabelas or Wholesale sports in your neck of the woods?  Even Princess Auto sells Hi Mountain kits.

First off welcome to SMF. You'll really like this place for there are a bunch of really good folks here that would just love to help you with just about anything to do with smoking meat. Then if you have any questions you just post them here or yu can try in chat for a faster answer. If you are really new to all of this I would recommend that you look up and take the e-course. It is free and it will also give you the basics on smoking. So with all that said now go and get something to smoke.

Lots of help for sausage available.  Please let us look over your shoulder by sending photos.  We love the photos.  Enjoy, and take advantage of all the resources available. As for the MES 30"  I feel your pain.  I received mine yesterday and it was damaged in transit, so now I have to wait for a replacement to arrive.  Now that I think about it, you are absolutely correct; it IS mocking me.  Finally, the AMNPS is in route even as we speak.  OOOHHH the excitement builds.
